Pork is the star be it pulled pork, caramelised pork or barbecue pork but vegetarians also have options too! Hey if we can't visit overseas we'll happily spend a day eating around Marrickville. And really there are no bad meals in this dense stretch of foodie heaven. Alex 'N' Rolls is one of Monica's favourite takeaway places in Marrickville. Ho worked at banh mi shops for a decade honing her skills. Sometimes when we eat out I don't know where Monica ends and I begin and vice versa. As I'm looking at the menu reading the words "sticky rice with caramelised pork" she whispers, "I think we should get the sticky rice with caramelised pork" and my eyes light up and I get a buzz of serotonin in my brain giving me happy signals. There's already a line and just a tip: it doesn't move very quickly so just be patient and prepared to wait. There's also a tiny courtyard to wait in and due to COVID there are only spaces for 2 people to eat and currently it is a couple of girls who don't seem to notice that people are waiting for their table after they've finished eating. I sip on an iced coffee while we wait for our food. It's sweet and strong and nicely chilled. Monica and I salivate over the display window with glistening cubes of soy marinated pork belly.

Alex N Rolls aren't your average pork roll place. They make all their ingredients from scratch, nothing is frozen unlike the more popular Marrickville Pork Roll just up the road, and their bread rolls are made fresh. Having said all that, I got there just before midday on a weekday, there was a very short line, I ordered and tapped my credit card, and 3 minutes later I had my roll. The caramelised pork was very tender, the sauce was subtle and smooth, the roll was crunchy, and they added just the right amount of chilli.

The two spent the next decade working in banh mi shops across the city, gaining skills and plotting about the moment they could open their own shop — one that did things a little differently. Their banh mi begins like others: with pate, mayo, lettuce, pickled carrot, radish, cucumber, onion and coriander. Most of the fish sauces available in Sydney are from huge commercial factories — Ho wants to get her hands on the small-batch homemade producers she was used to in Vietnam. Also, the spices are different, she tells us. The star-anise and cinnamon she finds here are generally imported from China or Thailand and taste and smell vastly different to the Vietnamese-grown varieties. Nguyen is from the north of the country and Ho is from the south — two vastly different culinary regions. Read more here.
