Between them, Zarate, ex-Julius Pizzeria sous chef Sanson, and ex-Beccofino pizza chef Spataro make a well-rounded team. So when the trio came across the ideal space on Given Terrace, formerly Arrosto, which was already fitted with a Marra Forni woodfired pizza oven and a beautiful exposed brick fit-out, they decided to take the plunge. Spataro handles the pizza menu, which is divided into classic rossa options — including the Salsiccia scamorza cheese, pork sausage and onion and Marina mozzarella, white anchovies, artichokes and watercress — while the pizza bianca get a little more creative, with choices such as the Trevisana mozzarella, gorgonzola, radicchio, cherry tomatoes, walnuts and ham and the Piemontese mushroom puree, mushrooms, buffalo mozzarella and artichokes. Sanson is responsible for the rest.

In February Paddington welcomed a new locale to its midst — Elementi. The Italian restaurant and wine bar is the first project from three friends with an admirable combined pedigree — ex-Julius sous chef Pedro Sanson, ex-Beccofino pizza chef Stefano Spataro and Mauricio Zarate, who has worked at Beccofino and Maeve Wine. Looking to pool their respective talents into a concept that was a true reflection of their tastes and passions, the team took over the seater space formerly occupied by Arrosto on Given Terrace, giving it an earthy and warm makeover that highlights the exposed-brick elements. On arrival, diners will immediately be welcomed by an extensive bar, which houses an impressive wine selection think bold choices, unusual bottles and minimal-intervention drops , alongside an array of cocktails and aperitivo. Further along sits the open pizza bar, where salivating patrons can watch on as the team works its magic in the open woodfired oven. Brought to Given Tce by a trio of talented folks who hail from Julius Pizzeria and Beccofino, Elementi is the go-to for casual yet top notch Italian dining and bar drinks. Take a seat in the stylish minimalist dining area, or European style on bar stools in front of the bar or pizza oven and enjoy everything from aperativi and bar snacks to a divine meal of pizza, pasta or dessert. Pizzas here are an absolute highlight - choose from Rossa red , Bianca white or Sfizio special. Rossa pizzas include the highly recommended Marina tomato, mozzarella, white anchovies, artichokes and rocket , Margherita and Salamino tomato, mozzarella, salami and olives. Drinks-wise, Elementi has an excellent curated wine list including an impressive selection from Italy, as well as boutique Australian wineries.
