Shows every 15 mins on weekends and every 30 mins on weekdays. Such a nice joy to see in a great hotel. Over the years the Buffet at Bellagio has maintained it's excellence and is my "go to" buffet.

Renowned Chef Akira Back has created a fusion of modern and traditional Japanese cuisine using only the finest and freshest seasonal ingredients flown in daily from around the world. Chef back has cultivated a menu of Japanese specialties that go beyond sushi and sashimi, offering a variety of selections for people of diverse tastes. My wife and I had our best dinner in Vegas at Yellowtail. The Tuna pizza not really a pizza was delicate and flavorful. The crab springroll was sharp in flavor and texture as was the spicy tune spring roll. Don't miss the grilled eggplant! Even if you don't think you like eggplant, this is superb.

Pop rock roll worth a try the quality of nigiri slightly dissapointing but still good if you are from the west coast.
