In my opinion, cheese is primarily the "glue" that secures the toppings to the base and this is exactly how it was applied to this pizza. Many pizzas are simply flooded with cheese on the top which ends up disguising the ingredients below, so it was great that they used cheese sparingly and underneath in order to showcase the rest of the delicious toppings.
