Does anyone know where I can find a comprehensive list of explanations of the cabin grades on P and O cruises? Also as you move amidships, the grade usually goes higher. This is because it's reckoned that a cabin amidships will experience less movement than one at the bows or the stern, and this is regarded as 'better', p and o cabin grades.

Pretty much always, all cabins of the same type will be identical, and any difference between different grades of the same type will be determined by the location of the cabin.
