Recreating the peanut butter stew she enjoyed in Accra brings the flavours of west Africa to wintry London for this food writer. When I first landed in Ghana, the jovial warmth with which I was greeted emphasised my failure at passing for local, but I felt I belonged. I had the privilege of being guided around the most vibrant corners of Accra by a close friend, Deborah, who had been on the same course as me at university in London and had recently returned to Ghana, where she was starting a new journey as an artist. Until then my experience of Ghana had been limited to the food from a small shop in Brixton market, where I tried waakye — rice and beans — and shito — a hot pepper sauce made with dried fish, prawns, onions, chilli, garlic, and spices. Deborah showed me her native city as a local. We drove around listening to Ghanaian-Romanian musician Wanlov the Kubolor singing about humanity in pidgin.

This is one of my favourite Ghanaian meals. It is delicious, warming, savoury and guaranteed to be one of your favourite Ghanaian dishes too. It is often made with poultry, stewing hen and smoked turkey but you can definitely make this with other meats like beed, lam, goat etc. The poultry or meat is seasoned, steamed and a tomato and onion based broth is added to this and of course a peanut butter groundnut mixture. The soup is simmered till the oil and fat from the meat and peanut butter settle on top and it is served with a perfectly rounded ball of white rice. Your email address will not be published. Peanut soup is a delicacy in Ghana. The first step is to make a soup or broth by adding whole onions, tomatoes and peppers to a pot of meat such as chicken, goat or beef. In a separate pot, add 2 tomatoes, 1 onion, 2 garlic cloves and 1 scotch bonnet pepper. Wet a bowl slightly with water and scoop rice into the bowl. Note: You can simply add plain tofu into your soup when you add your mushrooms and let it simmer for longer in the soup and serve. In another pot, combine fresh tomatoes, the remaining onion and set on heat. In Asia, you will find a variety of thick sauces and soups such as kare kare in the Philippines and the ever-popular Malaysian satay sauce. Recreating the peanut butter stew she enjoyed in Accra brings the flavours of west Africa to wintry London for this food writer. Add the peanut butter, tomato paste and about 1 cup of water to the blender and blend until smooth. Maafe is thought to originate from the Bambara and Mandinka people of Mali. There is more water in this recipe than when making rice normally, this is to make it easier to mash rice together. Rinse the rice to remove excess starch.

A huge bowl of thick, creamy, bright orange soup with large pieces of meat sitting in it — goat, chicken and beef. Turn down the heat, cover rice and allow the water to absorb into rice. Prep Time 20 minutes mins. To reheat rice balls you may remove plastic wrap and place in the microwave, alternatively you may place in boiling water with plastic wrap on to reheat, but ensure that water does not penetrate the plastic excessively or this will make the rice soggy. Others simply mix the peanut butter with water until smooth prior to heating until peanut oil separates and rises to the surface of the sauce. In another pot, combine fresh tomatoes, the remaining onion and set on heat. Add more water if it thickens too much. The recipe can work with various meats, or even a mixture of proteins. My memories of that day are of big smiles, abundant food served in large clay dishes, and licking pungent sauces off my forearm as I attempted to master the art of finger-eating. It may start to bubble so it is important to continuously stir to avoid splatter. These ingredients are topped off with water and stock cube or seasoning and allowed to simmer.
