Going Out Restaurants. I realised recently that Italian food is the closest thing I have to religion. Conjuring memories of a long ago summer lunch in Cinque Terre, I boarded the Tube anticipating basil pesto as green as the District line. First impressions implied existential crisis. Rock anthems blasted as diners tucked into green tea guinea fowl and kombucha chicken, and the wine list, though skewed towards the artisanal, felt overly long and international — I suspect a snappier Italian edit would work better. Now, a menu with so many food restrictions inevitably leaves a limited toolkit of ingredients with which to supplement textures and flavours.
