Vancouver waited a long time for former West Restaurant chef David Hawksworth to finally open his own place in the revamped Hotel Georgia , and when he finally did, the city was not disappointed. Like the complex, layered flavors for which the chef is known, the room—or rooms; the restaurant is divided into thematically different spaces—conveys a sense of luxury and highbrow sophistication. From the Damien Hirst and Rodney Graham paintings, to the colossal oval-shaped chandelier that serves as focal point, the restaurant is opulent but never stuffy. What's the vibe? In a city that's notorious for its casual approach to pretty much everything, there's less denim and more Harry Winston in Hawksworth than in any other Vancouver restaurant.
