Faced with shipment delays on fridges, bar stools, and other accoutrements that make a good bar great, but a space ready to serve drinks, what is a bunch of enterprising bar owners to do? So expect an Indian-inspired interpretation from one of their mates, and a take from Mat Lindsay of Poly and Ester in Sydney. The cocktails will echo that sentiment, and be focused on big flavours and fun times. But the popup will only be there for a short while, before they turn the space into something more permanent. Our prediction?
Visit Website. Good news: one of Sydney's best bars has officially expanded its footprint. Old Mate's Place has been a favourite in Sydney thanks to its hidden entrance, its cosy city rooftop, and its top-tier cocktails these guys invented the Mi Goreng Bloody Mary. Now, the Old Mate's crew has taken on the lease of the basement of the same building—and they have a few special things in store. For now, the basement bar is Ginny's Canoe Club. It's essentially a limited-run pop-up while the team schemes for a full renovation of the space and something "really special", says co-owner Dre Walters.
