A few recipes are very sensitive, akin to a chemical reaction where changing quantities, time or temperature can have serious consequences. This is definitely not one of them. Just make sure you adjust seasoning to taste once it's almost done. If it's too thick add a bit more stock, if it's too watery add more tomato puree to thicken it.
